Sweet, Sweet, Sweet Potatoes
It's almost that time of year again. The time for grilling out and family get togethers is upon us. It's warming up outside, and for me it triggers a change in the usual menu.
I switch from craving soups, slow cooker meals, and heavy comfort foods to wanting healthier foods with that freshness that only Mother Nature's bounty can provide. Sweet potatoes are an ultimate favorite in our household. There are so many different ways to prepare them. And I think my family likes every single one.
Sweet. Spicy. Sweet Potatoes.
In an effort to put a new spin on an old favorite, I threw together these brown sugar chipotle hasselback sweet potatoes. As I suspected, they were a hit, and will definitely be making a regular appearance on our weekly menu.
Here's the run down on how they come together...
Wash your sweet potatoes well. You want a couple 1/4" thick guides to place on each side of your potato. I used spatula handles, but butter knives work well, too. Using a sharp knife, make 1/4" thick slices down to your guide. They will keep you from slicing all the way through!
Once you have all of your sweet potatoes sliced, place them on a cookie sheet, and preheat your oven to 400°.
Drizzle the sweet potatoes with olive oil. Then, sprinkle with fresh ground sea salt, some cinnamon, and enough chipotle seasoning to feel the heat! If you have Littles like us, you can leave the chipotle seasoning off!
Pack on some brown sugary goodness. Make sure to pack it really good, and try to get some down in the cracks. The brown sugar is going to turn into a delicious crunch crust that pairs nicely with the soft sweet potato.
Pop those bad boys in the oven. They are going to need to cook for around 45 minutes, but the actual cook time is going to depend on the size of your sweet potatoes.
Make sure to check them at about 30 minutes of cook time and every 10-15 minutes after that until they are fork tender.

That's all there is to it! These taste amazing, and are very budget friendly. Plus, I'd be willing to bet you have most if not all of the ingredients in your pantry already. They make the perfect side to just about any meal. For the ultimate summer cook out meal, throw these on a plate with some greens and some of my Chipotle Pineapple Turkey Sliders! Brown Sugar Chipotle Hasselback Sweet Potatoes
Prep time: 10 minutes
Cook time: 45 minutes
Yield: As many as you want!
- Sweet potatoes
- Olive Oil
- Sea Salt
- Chipotle Seasoning
- Brown Sugar
Preheat your oven to 400°. Using 2 - 1/4" guides, make 1/4" slices in your sweet potatoes down to the guides so the sweet potato remains one whole piece. Place sliced sweet potatoes on a cookie sheet.
Drizzle with olive oil making sure to get the skins coated. Sprinkle the tops of the sweet potatoes with sea salt, cinnamon, and chipotle seasoning to taste. Pack the tops with brown sugar trying to get some down in the cracks. Put in oven and let bake for 30 minutes. Check every 10-15 minutes after until they are fork tender. Serve and enjoy!
